- 3/4 cup soft goat cheese
- 3 dates, chopped
- 1 tablespoon chopped fresh basil
- 4 skinless, boneless chicken breast halves
- 4 large, thin slices of prosciutto

Preheat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Prepare a baking sheet by spreading 1 tablespoon of olive oil evenly onto its surface, setting it aside for now.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Introduce the shallots into the pan and cook until they become translucent, approximately 3 minutes. Next, add garlic, thyme, salt, and pepper to the skillet; stir constantly for 2 minutes. Transfer the shallot mixture to a separate bowl.

Mix together goat cheese, dates, and basil in the bowl until well-combined.

Using a sharp knife, create a 1-inch long slit on the thick side of each chicken breast. Gently work your fingers into the slit and expand it to form a pocket.

Using your fingers or a spoon, fill each chicken breast with approximately 1/4 cup of the goat cheese mixture. Remove any excess cheese from the outside surface of the chicken breast and wrap each one in a slice of prosciutto, ensuring that the pocket opening is covered.

Position the chicken breasts, seam-sides facing down, onto the prepared baking sheet.

Bake the chicken in the preheated oven for 20 minutes. Flip the chicken breasts over and continue baking until they are no longer pink and the prosciutto is browned and crispy, approximately 20 minutes more.
