Herb-Stuffed Baked Bluefish in Foil
Ingredients
  • 2 1/2 pounds bluefish fillet(s)
  • 1 (8 ounce) container herb-seasoned dry bread stuffing mix
  • salt and pepper to taste
  • 1 1/2 cups boiling water
  • 1/2 cup butter, melted
  • 1/2 cup minced onion
  • 4 sprigs fresh dill weed
Instructions
1
Preheat your oven to a high temperature of 500 degrees Fahrenheit or 260 degrees Celsius. Line a baking sheet with a generous amount of aluminum foil that has been lightly coated with a thin layer of oil to prevent sticking.
2
Next, carefully remove the dark meat from the bluefish fillets and rinse them under cold running water to remove any impurities. Pat dry with paper towels and sprinkle with a pinch of salt and pepper to enhance the flavor.
3
In a separate bowl, combine the stuffing mix with boiling water and 8 tablespoons of melted butter until you achieve a smooth consistency. Spread the mixture evenly across the prepared baking sheet, covering it completely.
4
Place the bluefish fillets on top of the stuffing mixture, followed by a generous brushing of 2 tablespoons of melted butter to add extra moisture. Sprinkle some minced onion over the fish for added flavor, and finish it off with a few sprigs of fresh dill.
5
Fold the edges of the foil together to create a tight seal, making sure there are no gaps or openings. This will help retain the heat and moisture during cooking.
6
Bake the fish on the center rack of your preheated oven for an initial 10 minutes. After this, reduce the temperature to 400 degrees Fahrenheit or 200 degrees Celsius and continue baking until the fish flakes easily with a fork, taking an additional 20 to 30 minutes.
