In another small bowl, mix together the flour, herbes de Provence, seafood seasoning, salt, and black pepper until a uniform blend is achieved.

Cut the halibut into four equal-sized pieces for even cooking.

Heat a generous amount of olive oil in a large skillet over medium-low heat, allowing it to warm up thoroughly.

Dip each piece of halibut into the beaten egg, gently lifting it so that any excess egg drips back into the bowl.
