  • 8 roma (plum) tomatoes, cut in half and seeds removed
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons chopped garlic
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • salt and black pepper to taste
  • 1/2 cup crumbled feta cheese

Preheat your oven to a moderate heat setting of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric).

Combine a medley of tomatoes, olive oil, minced garlic, and chopped fresh herbs such as parsley, basil, and oregano in a spacious bowl. Ensure the seasonings are evenly distributed throughout the tomatoes by gently rubbing them into the fruit's cavities. Arrange the tomatoes, cut-sides facing upwards, on a baking sheet in an orderly fashion.

Sprinkle each tomato with approximately 1 tablespoon of crumbled feta cheese, taking care not to overdo it.

Bake the tomatoes in your preheated oven for a period of time that will result in them being cooked through but still retaining some firmness, approximately 15 minutes.
