Herb-Roasted Pork and Potatoes
Ingredients
  • 6 medium potatoes, peeled and quartered
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons chopped fresh chives
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 1 (4 pound) boneless pork loin roast
  • 1 teaspoon onion powder
Instructions
1
Firstly, preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
Next, submerge potatoes in a pot filled with water and cover them; boil the potatoes for approximately 10 minutes, or until they are tender. Remove from heat and let cool down before placing them in a bowl.
3
Then, mix the cooled potatoes with olive oil, chives, 1/2 teaspoon of thyme, 1/2 teaspoon of garlic powder, salt, and pepper to create a flavorful dish.
4
After that, season the remaining 1 teaspoon of thyme, 1/2 teaspoon of garlic powder, and onion powder on the pork roast; sprinkle with salt and pepper to enhance its taste.
5
Place the seasoned pork roast on a rack in a shallow roasting pan, and cook it in the preheated oven for 50 minutes.
6
Then arrange the boiled potatoes around the roast, and continue cooking until an instant-read thermometer inserted into the center of the roast reads 145 degrees Fahrenheit or 63 degrees Celsius, approximately 50 minutes later.
7
Finally, remove the roast from the oven, cover it with foil, and let it rest for 15 minutes before slicing and serving.
