Herb Roasted Orange Chicken
Ingredients
  • 1 cup chicken broth
  • 1 (4 pound) whole chicken, rinsed and patted dry
  • 1/2 cup butter, cut into 1 tablespoon sized pieces
  • 2 navel oranges, halved
  • salt and pepper to taste
  • 2 cloves garlic, minced
  • 1/2 cup butter, melted
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 sprigs fresh sage
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
Add a small amount of chicken broth to a roasting pan, and set it aside for later use.
3
Take the skin off the chicken breasts and thighs, making sure to loosen it evenly. Then, insert 1 tablespoon-sized pieces of butter under the loosened skin on each piece of chicken.
4
Transfer the stuffed chicken to the roasting pan you prepared earlier.
5
Squeeze the juice of 1 or 2 orange halves over each piece of chicken, and then insert them into the cavity of the chicken.
6
Tie the legs together using kitchen twine, and season the chicken with salt and pepper to taste.
7
Rub minced garlic all over the seasoned chicken, making sure it's evenly coated.
8
Drizzle 1/2 cup of melted butter all over the chicken, covering it completely.
9
Lay herb sprigs onto the breasts and around the legs of the chicken, giving it a fragrant aroma.
10
Cover the roasting pan with aluminum foil to trap the flavors and keep the chicken moist.
11
Bake the chicken in the preheated oven for 20 minutes, then remove the foil and baste it with the juices from the pan.
12
Continue cooking until the chicken reaches an internal temperature of 165 degrees Fahrenheit or 74 degrees Celsius, which can take anywhere from 1 to 2 hours.
13
Baste the chicken every 10-15 minutes after it's been uncovered, ensuring it stays moist and flavorful.
14
Once the chicken is cooked to perfection, let it rest for 10 minutes before slicing and serving.
