Herb Roasted Cucumbers and Onions
Ingredients
  • olive oil cooking spray
  • 2 tablespoons butter, cut into small chunks
  • 1 large cucumber - peeled, seeded, and cut lengthwise into spears
  • 1 small sweet onion (such as Vidalia®), cut in half and sliced
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh cilantro
  • 1 teaspoon chopped fresh mint

Preheat the oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius). Cover a 9x13-inch baking dish with a layer of aluminum foil. Apply a thin coating of olive oil to the foil using a cooking spray.

Place small pieces of butter on the prepared baking dish and arrange cucumber spears on top of the butter. Add slices of sweet onion over the cucumbers and sprinkle a variety of herbs, including basil, parsley, cilantro, and mint, evenly over the onion slices. Spray the vegetables with olive oil using a cooking spray once more.

Place the cucumber mixture in the preheated oven and allow it to cook until the cucumber spears start to become tender, approximately 10 minutes. Rotate the cucumbers and onion slices over and return them to the oven; continue cooking until the cucumbers are tender, taking around 15-20 minutes longer.
