  • 1/2 cup olive oil
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon salt
  • 1 teaspoon crushed black pepper

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Position a roasting rack on a baking sheet.

Position the turkey, breast-side downwards, on a cutting board. Utilize a pair of sharp, heavy-duty kitchen shears to make a cut along one side of the spine.

Repeat this process on the other side of the spine. Remove the backbone and reserve it for creating a turkey stock to serve as gravy.

Press firmly onto both sides of the turkey to flatten it out.

Flip the turkey breast-side upwards and place it on the roasting rack. Tuck the wing tips under the turkey, behind the breast. Pat the skin dry and apply olive oil evenly over the entire turkey. Season with sage, thyme, rosemary, salt, and pepper.

Roast in the preheated oven for 1 hour and 30 minutes, rotating the baking sheet every 30 minutes.

Increase the oven temperature to 400 degrees Fahrenheit (200 degrees Celsius) and continue roasting until the skin is crispy and golden, approximately 15 minutes more. An instant-read thermometer inserted into the thickest part of the thigh should read 165 degrees Fahrenheit (74 degrees Celsius).

Remove the turkey from the oven, cover it loosely with a doubled sheet of aluminum foil, and allow it to rest for 10 to 15 minutes before slicing.
