  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried marjoram
  • 1 teaspoon dry mustard
  • salt and ground black pepper to taste
  • 1/3 cup red wine
  • 1 tablespoon olive oil, or as needed

Acquire all necessary ingredients and prepare them for use.

Take a moment to generously coat the beef with thyme, basil, marjoram, dry mustard, salt, and black pepper; place the seasoned beef into a resealable plastic bag. Seal the bag securely and store it in the refrigerator, allowing it to marinate for 8 hours or overnight.

About 4 hours before cooking, pour red wine into the bag to add extra flavor.

Preheat your oven to 450 degrees F (230 degrees C). Drizzle a generous amount of olive oil over the bottom of a roasting pan; carefully transfer the seasoned beef into the prepared roasting pan.

Roast the beef in the preheated oven for 15 minutes. Once done, reduce the oven temperature to 350 degrees F (175 degrees C) and continue roasting until it reaches your desired level of doneness, approximately 20 to 25 minutes more. To ensure the beef is cooked correctly, use an instant-read thermometer inserted into the center to check for a temperature of 140 degrees F (60 degrees C). Once cooked, allow the beef to rest for 5 to 10 minutes before slicing it thinly against the grain.
