Ingredients
- 1/2 cup olive oil
- 5 cloves cloves garlic, minced or pressed through a garlic press
- 2 1/2 tablespoons fresh lemon juice, or more to taste
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- salt and freshly ground black pepper to taste
- aluminum foil
- 1 teaspoon olive oil
- 1 (3 pound) salmon fillet
- 1/4 cup chopped fresh parsley
- 1 lemon, sliced
Instructions
1
Heat your oven to its highest temperature setting, which is 375 degrees Fahrenheit or 190 degrees Celsius.
2
In a mixing container, merge together half a cup of olive oil, minced garlic, freshly squeezed lemon juice, brown sugar, dried oregano, thyme leaves, salt, and black pepper.
3
Position a large sheet of aluminum foil on a baking tray and anoint it with one teaspoon of olive oil. Carefully place a large piece of salmon, skin-side down, in the center of the foil sheet. Drizzle the olive oil mixture over the salmon.
4
Fold up the edges of the aluminum foil around the salmon, making sure to seal them tightly so that nothing escapes during cooking.
5
Place the salmon packet in the preheated oven and cook for 20 to 25 minutes, or until it breaks apart easily when pierced with a fork. Finish by garnishing the dish with fresh parsley leaves and slices of lemon.
