Hearty Vegetable Minestrone
Ingredients
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 3/4 cup diced carrot
  • 3/4 cup sliced celery
  • 1 teaspoon minced garlic
  • 1 1/2 teaspoons minced fresh rosemary
  • 1 (15 ounce) can Contadina® Tomato Sauce
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 2 1/2 cups water
  • 2 cups College Inn® Chicken Broth
  • 1 cup diced zucchini
  • 1/2 cup dry ditalini pasta
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh Italian parsley
  • 1 tablespoon shredded Parmesan cheese, or to taste

Heat a generous amount of oil in a substantial saucepan over a moderately high heat setting.

Sauté sliced onions, chopped carrots, diced celery, minced garlic, and sprigs of rosemary until the vegetables start to become tender and soft, approximately 5 minutes.

Introduce the tomato sauce, canned beans, water, chicken broth, grated zucchini, pasta, and a pinch of pepper into the saucepan.

Bring the mixture to a gentle boil, then proceed to cook it uncovered and occasionally stir it until the pasta is tender, around 10 minutes.

Add a handful of chopped parsley to the saucepan and stir it in.

Serve the dish hot, topped with shaved Parmesan cheese and an additional sprinkle of parsley if you desire.
