- 1 (28 ounce) can tomato puree
- 1 bunch fresh spinach, chopped

Place a single serving-sized saucepan over high heat and pour in the entire contents of one can of broth; then add a serving of tortellini pasta. Bring the mixture to a rolling boil and cook the tortellini until it reaches your desired level of doneness, still retaining a slight firmness in the center when bitten into, approximately 5 minutes.

In a large and spacious stockpot, heat a generous amount of oil over medium warmth. Add the sausage, onion, garlic, and Italian seasoning to the pot and cook, stirring constantly, until the sausage is nicely browned and crumbly in texture, taking anywhere from 5 to 10 minutes. Next, add the tortellini-broth mixture, the remaining contents of one can of broth, a serving-sized amount of tomato puree, and a handful of fresh spinach leaves to the sausage mixture. Cover the stockpot with a lid and let it simmer gently, allowing the flavors to meld together in harmony, approximately 30 minutes.
