Hearty Taco Soup

  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 (8 ounce) package cream cheese, softened and cut into pieces
  • 4 cups beef broth
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 1 (7 ounce) can chopped mild green chiles
  • 1/2 cup heavy cream
  • 1 teaspoon salt, or to taste

Heat a large, deep cooking vessel over a moderately high heat setting. Cook and constantly stir ground beef, onion, and garlic in the hot vessel until the beef is nicely browned and crumbly, and the onion has lost its raw appearance, approximately 5 to 7 minutes. If excess fat is present, it may be necessary to drain and discard it.

Add the spices cumin and chili powder to the pot, stirring well and cooking for a further 2 to 3 minutes. Introduce cream cheese pieces into the pot, mixing them in thoroughly and cooking until they have fully melted and no white bits remain. Add beef broth, undrained diced tomatoes, green chiles, cream, and salt to the mixture. Lower the heat to a medium level and cook until heated through, taking around 30 minutes, or longer if desired; however, it is crucial not to allow the mixture to boil, as this may result in curdling or separation.
