- 1 smoked ham hock
- 1 teaspoon kosher salt
- 1 tablespoon brown sugar
- 1 (6.5 ounce) can tomato sauce

Fill a large bowl with pinto beans and cover them completely with water. Allow the beans to soak for 4 hours, making sure to change the water every 30-45 minutes. After soaking, drain the beans.

In a large pot, bring 6 cups of water to a rolling boil. Add pinto beans, a ham hock, and kosher salt to the pot. If necessary, add more water to ensure that all ingredients are covered with at least 1 inch of liquid.

Turn the heat down to a medium-low setting and let the beans simmer for 2-3 hours, or until they are just tender.

Remove the ham hock from the pot and use two forks to pull the meat away from the bone. Chop the cooked ham into small pieces and return it to the pot.

Mix in a tomato sauce and brown sugar, stirring well to combine. Continue to simmer the beans for another hour, allowing them to become tender and the flavors to meld together.
