Hearty Shrimp, Sausage, and Chicken Gumbo
Ingredients
  • 1/2 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 cups chopped onions
  • 2 cups chopped green bell pepper
  • 6 cloves garlic, chopped
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • 1 pound Italian sausage
  • 3 (14.5 ounce) cans diced tomatoes with juice
  • 1 pound cooked, shredded chicken
  • 2 cups chicken broth
  • 1 1/2 cups spicy tomato-vegetable juice cocktail (such as V8®)
  • 4 teaspoons Creole seasoning
  • 1 pound uncooked shrimp - peeled, deveined, and tails removed
  • salt and ground black pepper to taste

Start by heating a large, heavy pot over medium-low heat and gradually add flour to it. Continuously stir the mixture until the flour develops a golden brown color, which should take around 15 minutes.

Transfer the golden brown flour to a separate bowl and put the pot back on the heat.

Increase the heat level of the pot to medium and carefully pour oil into it. Stir the onions and bell peppers in the hot oil until they are slightly tender, taking about 7 minutes.

Add garlic, thyme, and bay leaves to the onion mixture and stir everything together for a minute. Then, incorporate the sausage into the onion mixture and cook until it's nicely browned and crumbly, which should take around 5 to 10 minutes.

Combine diced tomatoes with their juice, shredded chicken, chicken broth, vegetable juice cocktail, browned flour, and Creole seasoning into the sausage mixture. Bring the entire mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 20 to 30 minutes, stirring occasionally until all the flavors blend together.

Add the shrimp into the sausage-chicken mixture and bring it to a gentle simmer. Cook the shrimp until they turn pink on the outside and their meat becomes opaque, taking about 5 minutes.

Remove the bay leaves from the pot. Season the gumbo with salt and pepper according to your taste preferences.
