  • 2 tablespoons horseradish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil

Place the beets in a saucepan, making sure they are fully submerged in water.
