Hearty Portuguese Bean Soup
Ingredients
  • 2 pounds spicy Portuguese sausage, sliced
  • 1 pound ham hocks
  • 1 onion, sliced
  • 2 quarts water
  • 2 carrots, diced
  • 3 potatoes, diced
  • 1 small head cabbage, chopped
  • 1 (8 ounce) can tomato sauce
  • 2 (15 ounce) cans kidney beans
  • 1 (16 ounce) package macaroni

Combine sausage, ham hocks, onion, and water in a large pot over low heat. Bring the mixture to a gentle boil, then reduce the temperature and let it simmer for 1 hour.

Remove the ham hocks from the soup, extract the meat, and tear it into small fragments. Reintroduce the ham pieces back into the pot. Combine the ingredients with carrots, potatoes, cabbage, and tomato sauce until everything is well incorporated.

Cover the pot and let it cook for 1 to 1 ½ hours, allowing all the flavors to meld together.

Add beans and pasta to the pot, stirring until they are fully incorporated with the rest of the ingredients. As needed, add more water to achieve your desired consistency.

Continue cooking until the beans and pasta are heated through, with the pasta retaining a slight firmness to the bite. This should take around 10 minutes.
