  • 1 cup chopped yellow onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 4 garlic cloves, minced
  • 1 pound ground bison
  • 1/2 pound spicy ground pork sausage
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon unsweetened cocoa powder
  • 1 teaspoon Worcestershire sauce
  • 1 (28 ounce) can crushed tomatoes
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper

Submerge chipotle pepper in boiling water for a period of 10 minutes, allowing it to become pliable. Extract the pepper from the water and chop into smaller pieces.

Heat coconut oil in a large cooking vessel over medium heat. Gradually warm the oil until it reaches a suitable temperature for sautéing, approximately 5 to 10 minutes. Sauté sliced onions, green bell peppers, and red bell peppers until they are tender and soft, about 5 to 10 minutes. Introduce minced garlic into the onion mixture and continue cooking until fragrant, approximately 1 minute.

Combine ground bison and sausage with the onion mixture. Cook and stir constantly until the meat is browned and has a crumbly texture, approximately 10 to 12 minutes.

Add chili powder, cumin, oregano, cocoa powder, and Worcestershire sauce to the bison mixture. Introduce crushed tomatoes, salt, and pepper into the mixture, stirring well to combine. Bring the mixture to a boil, then reduce heat to low and simmer until the flavors have melded together, about 10 minutes.
