  • 1 pound mild pork sausage (such as Jimmy DeanĀ®)
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 (2 pound) package frozen shredded hash brown potatoes
  • 12 large eggs, beaten
  • 1 (16 ounce) package shredded Cheddar cheese

Establish a campfire and permit the flames to build up until they form a substantial layer of smoldering embers. Position a metal grate above the fire, creating a barrier between the heat and your cooking vessel.

Position a 12-inch cast iron Dutch oven on top of the grate, ensuring it's securely in place. Introduce sausage, onion, and garlic into the pot; stir constantly until the sausage is nicely browned and crumbly, while the onion becomes translucent, taking approximately 5 to 7 minutes. Combine hash browns and bell peppers with the sausage mixture, stirring until everything is well combined. Cook, occasionally stirring the contents, until the hash browns are hot and the peppers are tender, approximately 15 minutes.

Carefully pour beaten eggs into the Dutch oven, allowing them to settle at the bottom of the pot. Cover the Dutch oven and place it directly onto 5 to 10 hot coals, taking care not to let the eggs cook too quickly. Position another 12 to 18 hot coals on top of the Dutch oven lid, creating a layer of heat above the eggs. Allow the eggs to cook until they're firm and set, approximately 40 minutes. Remove the lid and sprinkle with Cheddar cheese; cover once more and continue cooking until the cheese has melted, taking around 5 minutes.
