Ingredients
- 1 pound sage pork sausage
- 1 (6 ounce) package uncooked long grain and wild rice mix, with seasoning packet
- 2 (15 ounce) cans black-eyed peas, drained
- 2 (14.5 ounce) cans diced tomatoes, with liquid
- 2 (14 ounce) cans chicken broth
- 2 cups water
- salt to taste
Instructions

Heat a skillet over medium heat and break the sausage into small pieces, cooking until they are uniformly browned.

Combine the cooked sausage with a mixture of uncooked rice, seasoning packet, black-eyed peas, diced tomatoes, broth, and water in the skillet.

Bring the mixture to a rolling boil, then lower the heat to low and cover it with a lid.

Simmer for 20 minutes, or until the rice is tender and has absorbed most of the liquid.

Add a pinch of salt to taste, adjusting the seasoning as needed.
