Hearty Ground Beef and Vegetable Soup
Ingredients
  • 2 pounds ground beef
  • 4 carrots, diced
  • 4 celery ribs, chopped
  • 1 onion, chopped
  • 4 potatoes, peeled and cut into 1-inch pieces
  • 1 (15.25 ounce) can whole kernel corn, drained and rinsed
  • 1 (15 ounce) can green beans, drained and rinsed
  • 1 (15 ounce) can peas, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can whole tomatoes, crushed
  • ground black pepper to taste
  • 1 bay leaf, or more to taste
  • 1/8 teaspoon ground thyme
  • 1/4 cup water, as needed

Heat a large stockpot over medium-high heat, then add the ground beef and break it down into small pieces. Continue to cook and stir the mixture until the meat is fully broken down, evenly browned, and no longer pink, taking around 7 to 10 minutes.

Remove any excess fat from the pot by draining it and discarding the leftover grease.

Next, add the chopped carrots, celery, and onion to the pot, stirring constantly as they cook until they become soft, approximately 5 minutes.

Add diced potatoes, frozen corn, green beans, and undrained peas to the pot. Stir in a can of tomato sauce and crushed whole tomatoes, adding black pepper for flavor. Add a few sprigs of bay leaf and some thyme to the pot as well.

If the soup becomes too thick, add a little water - about 1/4 cup - to thin it out and replenish the liquid as needed during cooking.

Once the soup reaches a gentle simmer, cover it with a lid and continue to cook, stirring occasionally, until the potatoes are tender, which should take around 1 hour.
