Hearty Ground Beef and Rice Casserole
Ingredients
  • 1 pound lean ground beef
  • 1 medium green bell pepper, diced
  • 1 medium tomato, chopped
  • 4 tablespoons Worcestershire sauce
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 tablespoon minced onion
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and ground black pepper to taste
  • 2 cups cooked rice
  • 1/2 cup shredded Cheddar cheese
Instructions
1
Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
Heat a large cooking vessel over the medium-high heat level. Cook and stir ground beef in the hot vessel until it is nicely browned and crumbly, taking anywhere from 5 to 7 minutes. Add sliced bell pepper, diced tomatoes, and a sauce made from Worcestershire to the mixture. Cook and stir until the pepper has slightly lost its crispness, approximately 5 minutes. Remove half of the liquid from the canned diced tomatoes and pour it into the mixture.
3
Stir in the remaining ingredients, including diced onions, minced garlic, dried oregano, fresh basil leaves, salt, and pepper. Allow the mixture to simmer until some of its liquid has evaporated, roughly 10 minutes. Combine cooked rice with the ground beef mixture and blend well.
4
Transfer the mixture to a baking dish and sprinkle shredded Cheddar cheese on top. Place it in the preheated oven and bake until the filling is hot throughout and the cheese has melted, taking approximately 45 minutes.
