- salt and ground black pepper to taste
- 2 cups chicken broth
- 1 cup farro
- 2 cups chopped kale
- 1/2 cup crumbled reduced-fat feta cheese

Combine olive oil, minced garlic, freshly squeezed lemon juice, salt, and black pepper in a bowl; reserve for later use.

In a large skillet or wok, combine chicken broth and farro; heat over high until the mixture reaches a rolling boil. Lower the heat to a medium level and let it simmer for 20-25 minutes, or until the farro is tender and most of the liquid has been absorbed.

Once the farro is cooked, stir in the previously prepared mixture of olive oil, garlic, lemon juice, salt, and black pepper until it is evenly coated. Add a handful of curly kale to the skillet; cook, stirring occasionally, until it has wilted and lost some of its crunchiness, about 2-3 minutes.

Sprinkle crumbled feta cheese over the top of the salad; mix it in thoroughly. Finish with a pinch of salt and a few grinds of black pepper to taste.
