Hearty Cornish Hen Soup

  • 1 Rock Cornish hens
  • 2 tablespoons vegetable oil
  • 5 stalks celery, chopped
  • 3 large carrots, diced
  • 1 onion, chopped
  • 6 cloves garlic, minced
  • 3 potatoes, peeled and cubed
  • 1 (48 fluid ounce) can chicken broth

Start by removing the gizzards from the hen and give it a thorough rinse under cold running water. Cut the hen into several manageable portions.

Next, heat some oil in a large cooking vessel over medium-high heat. Add the hen pieces and cook them in the hot oil until they are nicely browned on all sides. Add sliced celery, chopped carrots, diced onion, minced garlic, and diced potatoes; cook and stir constantly until the onion is tender.

Now, pour in some chicken broth into the pot. You can use as much or as little of the broth as you prefer, but make sure it covers all the ingredients in the pot. Bring the mixture to a rolling boil, then reduce the heat and let it simmer until the vegetables are tender and the hen is cooked through.

Remove the hen from the pot, take out the meat from its bones, and discard the bones. Return the cooked hen meat to the soup pot and serve it hot immediately.
