Ingredients
- 1/2 cup lentils
- 1 1/2 cups water
- 1 small tomato, chopped
- 1 small onion, chopped
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1 tablespoon vegetable oil
- 2 small yellow potatoes, cubed

Combine lentils with water and add diced tomato, chopped onion, ground cumin, a pinch of salt, and a drizzle of oil in a large cooking vessel over medium heat; bring the mixture to a rolling boil.

Continue to cook at a rolling boil, stirring occasionally, until the lentils have become tender and soft, which should take approximately 30 minutes.

Next, add diced potatoes to the pot and continue cooking until they are tender, requiring an additional 15 minutes of cooking time.
