- 4 large eggs
- 1 cup shredded Cheddar cheese

Heat a large frying pan over medium-high heat, stirring the bacon periodically until it's uniformly browned, taking around 10 minutes. Remove excess fat from paper towels; reserve most of the bacon's rich flavor in the pan.

Shred the cooked bacon and set it aside temporarily.

Lower the heat to a medium level. Cook and stir the onion in the preserved bacon fat until it's slightly tender, approximately 5 minutes. Add diced potatoes; mix them evenly with the bacon fat. Pour in water and cover the pan with a lid. Cook, stirring occasionally, until potatoes are tender, taking roughly 20 minutes.

Combine chopped green onions, minced garlic, and a pinch of paprika. Add kosher salt and black pepper to taste. Create 4 wells in the potato mixture using a wooden spoon, exposing the bottom of the pan.

Gently place an egg into each well; sprinkle with salt and pepper to taste.

Sprinkle shredded Cheddar cheese and additional bacon over the entire pan.

Cover the pan and cook until egg whites are set and yolks remain runny, taking around 5 minutes. Present and indulge in your dish!
