Hearty Beef Casserole
Ingredients
  • 8 large potatoes, peeled and chopped
  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 1 (15 ounce) can carrots, drained
  • 1 (15 ounce) can green beans, drained
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed tomato soup
  • 3/4 cup shredded Cheddar cheese
Instructions
1
Begin by preheating your oven to a high temperature, specifically 350 degrees Fahrenheit or 175 degrees Celsius. Next, lightly coat a rectangular baking dish measuring 9x13 inches with a thin layer of oil or cooking spray.
2
While your oven is warming up, fill a large pot with salted water and bring it to a rolling boil. Then, add diced potatoes to the boiling water and cook until they are tender but still retain some firmness, approximately 15 minutes. Drain the potatoes and mash them using a fork or potato masher.
3
Simultaneously, combine ground beef and chopped onion in a large skillet over medium-high heat. Stir the mixture constantly until the beef is evenly browned and crumbly, while the onion becomes tender, taking around 7 to 10 minutes. Drain excess fat from the skillet.
4
In a separate bowl, mix together steamed carrots, green beans, and canned condensed soups. Add this mixture to the skillet with the cooked beef and stir until well combined. Transfer the beef mixture to the prepared baking dish.
5
Next, spread the mashed potatoes evenly over the beef mixture. Finally, sprinkle shredded Cheddar cheese over the top of the dish.
6
Place the baking dish in a preheated oven and bake until the potatoes are lightly golden brown on top, approximately 30 minutes.
