Ingredients
- 6 cups hot water, divided
- 2 beef bouillon cubes
- 1 (1 ounce) package dry onion soup mix
- 1 pound beef stew meat, cut into 1-inch cubes
- 3 large potatoes, peeled and cut into 1-inch cubes
- 1/2 large onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 tablespoons minced garlic
- 1 1/2 cups pearl barley

Heat the water in a microwave-safe container to its boiling point, taking approximately 2 minutes. Combine beef bouillon cubes and onion soup mix into the water, stirring until they are fully incorporated.

Transfer the bouillon mixture along with the remaining 4 cups of water to a slow cooker and set it to High. Add beef, potatoes, onion, carrots, celery, and garlic to the slow cooker.

Cook the mixture covered for an extended period of time until potatoes are tender when pierced with a fork, spanning 4 1/2 to 5 hours. Introduce barley into the beef mixture and continue cooking until it is tender, approximately 30 minutes.

Switch the slow cooker to its 'off' position, remove the cover, and permit it to cool slightly until a thicker consistency is achieved, roughly 5 minutes.
