Ingredients
- 1 pound dry pinto beans, rinsed
- 2 tablespoons minced garlic, divided
- 1 medium tomato, diced
- 2 tablespoons ground cumin
- 1 tablespoon chili powder
- 2 tablespoons olive oil
- salt to taste
Instructions
1
Begin by placing the beans in a substantial saucepan and immersing them in water to a depth of approximately 1 inch. Next, place the saucepan over high heat and wait for it to reach a rolling boil. At this point, drain the water from the saucepan and return the beans to their original container.
2
Subsequently, cover the beans with water once more, this time to a depth of 2 inches. Then, stir in the remaining 1 tablespoon of garlic, along with tomato, cumin, and chili powder. Bring the mixture to a boil over high heat before gradually reducing the heat to low, allowing it to simmer for an extended period of 3 hours and 45 minutes. Throughout this time, periodically add water as necessary to maintain the desired consistency.
3
Once the beans have reached their tender state after 3 hours and 45 minutes of simmering, mash them using the remaining garlic, oil, and salt. To achieve your desired level of consistency, you may need to add additional water as required. Finally, place the saucepan over low heat and stir the mixture occasionally for 30 minutes.
