Put a pork tenderloin into a slow cooker with thinly sliced onions. Pour wine, water, and soy sauce over the top of the pork, ensuring it is well-coated. Rotate the pork to distribute the liquid evenly and coat all surfaces. Sprinkle minced garlic over the top of the pork, leaving a generous amount on the surface. Finish with a few grinds of black pepper. Cover and cook on Low for an extended period, typically around 4 hours, or until the pork reaches a slightly pink hue in the center. To verify doneness, insert an instant-read thermometer into the center of the pork and check that it reaches a minimum internal temperature of 145 degrees F (63 degrees C).
