  • 2 tablespoons freshly ground black pepper
  • 1 tablespoon ground cumin
  • 1 teaspoon cayenne pepper
  • 2 racks baby back pork ribs
  • 1 cup barbecue sauce, divided
  • 4 sesame hamburger rolls, split and toasted
  • 1 cup coleslaw

Preheat the oven to 325 degrees Fahrenheit, which is equivalent to 165 degrees Celsius.

Mix together salt, brown sugar, chili powder, pepper, cumin, and cayenne to create a rub. Combine these ingredients in one bowl.

Place the pork ribs on a baking sheet lined with aluminum foil. Generously sprinkle some of the rub mixture onto both sides of the ribs, setting aside any remaining rub for future use. Cover the top of the ribs with parchment paper and wrap the foil around the edges, ensuring a tight seal. Cover the entire baking sheet with another large sheet of foil to prevent heat from escaping.

Bake the ribs in the preheated oven until they are tender and fall-apart, approximately 2 hours and 45 minutes.

Once the ribs have finished baking, carefully unwrap them and let them cool for a short period of time until they are safe to handle. Remove the bones from the ribs, filling any gaps with loose pieces of meat and double-checking for any remaining bone fragments. Wrap the ribs back up tightly and refrigerate them overnight, allowing them to chill for at least 8 hours.

Preheat a charcoal grill to high heat, lightly oiling the grate to prevent sticking. Grill the ribs until heated through, approximately 3 to 4 minutes per side.
