Healthy Lasagna Roll Ups

  • 8 whole wheat lasagna noodles
  • 1/2 pound ground turkey
  • 6 cloves garlic, crushed
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup chopped fresh chives
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried basil
  • 2 egg whites
  • 1 (15 ounce) container reduced-fat ricotta cheese
  • 2 tablespoons crumbled low-fat feta cheese
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon ground black pepper
  • 1 (28 ounce) jar low-fat tomato pasta sauce
  • 1/2 cup shredded low-fat Cheddar cheese

Preheat your oven to a hot temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric).

Fill a large pot with water and add a pinch of salt to the water. Bring the water to a rolling boil, then cook lasagna noodles according to package instructions until they are tender. Drain the noodles.

In a pan over medium heat, cook ground turkey with minced garlic until it is no longer pink, breaking the meat apart as it cooks. Stir in a handful of fresh herbs - including spinach, chives, oregano, parsley, and basil - into the ground turkey mixture.

In a separate bowl, whip egg whites until they become frothy. Mix ricotta, feta, and Parmesan cheeses into the whipped egg whites until well combined. Add a few grinds of black pepper to taste.

Mix the cooked ground turkey mixture into the cheese mixture until well combined.

Place a sheet of waxed paper on a flat surface. Divide the filling into 8 equal portions and shape each portion into a ball. Place a ball of filling on one end of a cooked lasagna noodle and roll the pasta up around the filling, starting from the other end. Repeat with the remaining noodles and filling.

Spread a thin layer of pasta sauce over the bottom of a 9x13-inch baking dish. Arrange the rolled lasagna noodles seam-side down in the dish, and pour the remaining pasta sauce over them. Sprinkle a layer of Cheddar cheese on top.

Cover the dish with aluminum foil and bake in the preheated oven until the cheese topping has melted and the sauce is bubbling, approximately 40 minutes.
