Healthy Lasagna
Ingredients
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup low-fat cottage cheese
  • 1 egg
  • cooking spray
  • 1 onion, chopped
  • 2 large garlic cloves, minced
  • 2 cups chopped mushrooms
  • 1 cup shredded carrots
  • 1 pound ground turkey breast
  • 1 (26 ounce) jar low-fat pasta sauce (such as Healthy Request®)
  • 1 cup water
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 6 no-boil lasagna noodles
  • 1 cup shredded low-fat mozzarella cheese
  • 1 cup tomato-vegetable juice cocktail

First, preheat the oven to a high temperature of 400 degrees Fahrenheit or 200 degrees Celsius.

Next, combine the spinach, cottage cheese, and egg in a large mixing container to create a savory mixture.

In a separate cooking vessel, heat a non-stick spray-coated skillet over medium-high heat. Add the onion, garlic, mushrooms, and carrot to the skillet and cook until the onion is tender, taking approximately 5 minutes. Introduce the ground turkey into the skillet and stir until it is fully cooked, taking about 5 minutes. Add pasta sauce and water to the skillet, seasoning with rosemary, oregano, and basil. Simmer the sauce for 10 minutes.

Prepare a 9x13 baking dish by spraying it with non-stick cooking spray. Distribute one-third of the sauce on the bottom of the dish, followed by 3 cooked noodles. Add an additional one-third of the sauce on top of the noodles, then spread the spinach mixture over it. Sprinkle one-half of the mozzarella cheese on top. Add an additional 3 noodles and the remaining sauce, finishing with a layer of mozzarella cheese.

Pour vegetable juice evenly over the lasagna layers and cover it with foil.

Bake the dish in the preheated oven for 45 minutes. Remove the foil and bake for an additional 10 minutes, allowing the cheese to melt and bubble. Remove from the oven and let it rest for 10 to 15 minutes before serving.
