Hazelnut-Crusted Halibut with Garlic Potatoes
Ingredients
  • 1 pound red potatoes, cut into chunks
  • 5 cloves garlic, minced
  • 1/2 teaspoon salt
  • 3 tablespoons butter
  • 1/4 teaspoon ground black pepper
  • 1/4 cup hazelnuts
  • 1/4 cup seasoned bread crumbs
  • 2 halibut fillets
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 5 tablespoons butter
  • 3 tablespoons vegetable broth

Begin by submerging potatoes into a large pot and covering them with water. Next, bring the mixture to a rolling boil over high heat before gradually reducing the temperature to medium-low and covering it. Allow the potatoes to cook until they're tender, which should take around 20 minutes.

During this time, prepare the garlic by mashing it together with a small amount of salt until you have a smooth paste. Once the potatoes are done, drain them and then mash them together with the garlic paste, butter, and a pinch of pepper. Keep the mixture warm.

While your potatoes are cooking, take some hazelnuts and bread crumbs and blend them together in a food processor until they're finely ground, but not turned into a paste. Transfer the mixture to a shallow dish and season your halibut fillets on both sides with a small amount of salt.

Take one side of each halibut fillet and gently press it into the nut mixture, making sure to coat it evenly. Set these aside for now.

Heat some olive oil and butter in an oven-safe skillet over medium-high heat. Place the halibut fillets into the skillet, nut-side-up, and cook until they start to brown on top. This should take around 3-4 minutes.

Turn the fillets over and place them in the preheated oven. Allow them to cook, nut-side-down, until they're flaky and easy to break apart with a fork. This should take about 5 minutes.

While the fish is cooking, melt some of the butter in a small saucepan over medium-high heat until it turns nut brown. Stir in some vegetable broth and bring the mixture to a simmer.

Finally, serve your dish by mounding the potatoes onto each dinner plate. Place a halibut fillet on top of the mashed potatoes, nut-side-up, and drizzle it with the browned butter sauce.
