- 1 egg
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour, sifted
- 1/4 teaspoon baking soda
- 1/2 cup ground hazelnuts
- 1 egg, beaten
- 1/4 cup multicolored candy sprinkles (jimmies), or amount needed

Combine the butter, sugar, egg, and salt in a mixing bowl and whisk until they come together in a smooth consistency. Add the flour and baking soda, blending just until the ingredients are well combined. Fold in the hazelnuts.

Transfer the dough to a lightly dusted surface and shape it into a 2 1/2 inch cylindrical form. Wrap the dough tightly in wax paper and refrigerate for an extended period of time.

Heat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line the baking sheets with a thin layer of grease.

Remove the dough from the wax paper and slice it into 1/8 inch thick rounds. Place the slices on the prepared baking sheets, leaving about 2 inches of space between each round. Brush the tops with a beaten egg and add sprinkles if you wish to decorate them.

Bake the rounds in the preheated oven until they are lightly browned around the edges, taking about 12 to 15 minutes. Remove them from the oven and let them cool on racks before storing them in an airtight container
