  • 2 pounds beef short ribs, or more to taste

Combine water, sugar, soy sauce, sesame oil, garlic, and ginger in a large glass or ceramic container. Mix the ingredients thoroughly until they are well incorporated. Add beef short ribs and gently stir to ensure even coating with the mixture. Cover the container with plastic wrap and refrigerate for 8 hours or overnight to allow the flavors to meld.

Preheat an outdoor grill to medium-high heat and lightly brush the grill grates with oil. Remove short ribs from the mixture and discard the excess liquid.

Cook the short ribs on the grill until they are evenly browned, flipping them 3 to 4 times per side. Use an instant-read thermometer inserted into the center of the ribs to check for doneness, aiming for a temperature reading of 145 degrees F (63 degrees C).
