Ingredients
  • 1 cup soy sauce
  • 1 cup brown sugar
  • 1 cup water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger root
  • 1 tablespoon ground black pepper
  • 1 tablespoon dried oregano
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground paprika
  • 5 pounds skinless chicken thighs

Combine soy sauce, brown sugar, water, onion, garlic, ginger, black pepper, oregano, red pepper flakes, cayenne pepper, and paprika in a large glass or ceramic container. Mix the ingredients thoroughly to create a uniform blend. Add chicken thighs and gently stir until they are evenly coated with the marinade. Cover the container with plastic wrap to prevent contamination and refrigerate for at least 1 hour.

Heat a grill over medium heat, taking care not to exceed the recommended temperature. Lightly brush the grill grates with oil to prevent sticking and promote even cooking.

Once the chicken thighs have been removed from their marinade, discard any remaining sauce. Place the chicken on the preheated grill and cook until it reaches a safe internal temperature, indicated by an instant-read thermometer reading at least 165 degrees F (74 degrees C).
