Hawaiian Chicken Rice Haystacks
Ingredients
  • 1 tablespoon olive oil
  • 4 skinless, boneless chicken breast halves, cut into small cubes
  • 1/2 cup chicken broth
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 cups cooked rice
  • 1 cup chopped pineapple
  • 1 cup chopped green bell pepper
  • 1 cup shredded Cheddar cheese
  • 1 cup chopped fresh tomatoes
  • 1 cup chow mein noodles
  • 1/2 cup toasted sliced almonds
  • 1/2 cup chopped green onions
  • 1/2 cup shredded coconut
Instructions
1
Preheat the skillet over medium heat, allowing olive oil to melt and become warm.
2
Add boneless, skinless chicken breast to the skillet and stir constantly until it reaches an internal temperature of 165 degrees Fahrenheit, approximately 5 to 7 minutes.
3
Pour in chicken broth and reduce heat to low, allowing the liquid to simmer gently for about 5 minutes.
4
Combine the chicken mixture with a can of cream of mushroom soup, some chopped fresh basil leaves, and a handful of parsley until the sauce is smooth and well combined.
5
Transfer the chicken sauce to a small serving dish.
6
Arrange cooked white rice on a large serving platter, spreading it evenly.
7
Spoon the chicken sauce over the rice and top with a colorful arrangement of pineapple slices, diced green bell peppers, shredded Cheddar cheese, cherry tomatoes, chow mein noodles, sliced almonds, and chopped green onions.
8
Finish the dish by sprinkling shredded coconut over the top of the arrangement.
