Harvest Ham Stew
Ingredients
  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 2 cloves garlic, chopped
  • 1 pound ham steak, cubed
  • 1/2 medium head cabbage, chopped
  • 1 cup water
  • 2 large potatoes, sliced thick
  • 3 carrots, chopped
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon caraway seed
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 3 cups firmly packed greens, such as spinach, chard or beet tops
Instructions
1
Heat the olive oil in a substantial cooking vessel over a moderate temperature. Introduce the onions into the pot and cook until they become soft, approximately 3 minutes. Add the garlic and ham to the mixture; continue cooking for an additional 2 minutes. Introduce the chopped cabbage and water into the pot, cover it, and allow it to simmer for 10 minutes.
2
Add the potatoes, carrots, celery seed, caraway seed, paprika, salt, and pepper to the pot. Cover it again and let it simmer for 10 to 12 minutes.
3
Decrease the heat to a lower medium level, add the greens to the pot, adjust the seasonings according to taste, and cook for 10 minutes.
