Ingredients
- 1 teaspoon butter
- 1 teaspoon olive oil
- 4 stalks celery, diced
- 1/2 large carrot, shredded
- 1/3 white onion, diced
- salt to taste
- 3 cups split peas, rinsed
- 3 cloves garlic, thinly sliced
- 1 ham bone
- 5 cups chicken stock
- 2 cups water, or as needed
- 1 cup diced ham
- ground black pepper to taste

Acquire all necessary components.

Melt butter and oil in a large cooking vessel or deep pot over a moderate-low heat setting. Combine chopped celery, sliced carrot, diced onion, and salt; cook and stir until the vegetables are tender, approximately 5 minutes. Introduce frozen peas and minced garlic into the mixture; stir well to combine.

Carefully position a ham bone at the bottom of the pot, followed by the addition of stock and diced ham. Ensure that there is enough liquid to cover approximately 1 1/2 inches of the pot's surface; bring the mixture to a rolling boil.

Gradually decrease the heat to low and cover the pot. Allow the soup to simmer, stirring every 30 minutes and scraping the bottom of the vessel, until the peas have broken down significantly, roughly 2 1/2 hours. Periodically turn the ham bone and skim off any excess fat that rises to the surface.

Once the soup has cooled enough to handle, carefully remove the ham bone from the pot and place it on a flat surface. Remove any meat from the bones and cut them into bite-sized pieces; gently stir these pieces back into the soup until warmed through. Season with salt and pepper to taste.
