Ingredients
- 3 large red potatoes, diced
- 1 onion, chopped
- 1 cup diced cooked turkey
- 1 cup diced cooked ham
- 2/3 cup diced celery
- 2/3 cup sliced carrots
- 2/3 cup chopped asparagus
- 2/3 cup frozen peas
- 2/3 cup peeled and cubed butternut squash
- 1 (32 ounce) carton chicken broth
- 1 cup water
- 1 teaspoon Italian seasoning, or to taste
- 1 teaspoon ground white pepper, or to taste
- 1/2 teaspoon salt, or to taste
- 3 bay leaves
- 1/4 cup butter
- 7 tablespoons all-purpose flour
- 2 cups milk
Instructions
1
Combine the ingredients of potatoes, onion, turkey, ham, celery, carrots, asparagus, peas, and butternut squash in a large container. Pour chicken broth and water over the mixture; bring it to a rolling boil.
2
Reduce the heat to a moderate level and let it simmer for 10-15 minutes, or until the potatoes and squash are tender.
3
Add Italian seasoning, white pepper, salt, and bay leaves to the soup mixture and continue to let it simmer.
4
In a separate pan, melt butter over medium-low heat. Gradually add flour while whisking constantly until it thickens, approximately 1 minute.
5
Slowly pour in milk and continue whisking until the mixture is smooth and thickened, around 4-5 minutes.
6
Stir the milk mixture into the simmering soup and cook until it thickens and reaches the desired temperature, 3-5 minutes.
