Ingredients
- 3 cups leftover mashed potatoes
- 1 cup shredded Cheddar cheese, divided
- 1 (2.8 ounce) package French fried onions, divided
- 1 1/2 cups diced leftover cooked ham
- 1 (10 ounce) package frozen peas and carrots, thawed and drained
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 3/4 teaspoon dry mustard
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon fresh ground black pepper
- aluminum foil

Preheat your oven to the desired temperature of 375 degrees Fahrenheit or 190 degrees Celsius.

Mix half of the Cheddar cheese with half of the onions and combine them into your mashed potatoes. Spread this potato mixture evenly across the bottom and up the sides of a 2-quart casserole dish to create a layered shell.

In a separate bowl, blend together the ham, frozen peas and carrots, mushroom soup, mustard, garlic, and pepper until well combined. Spoon this mixture into the potato shell you've created.

Cover the top of the casserole loosely with aluminum foil and place it in the preheated oven for 45 minutes.

Remove the casserole from the oven and sprinkle the remaining Cheddar cheese and onions over the top. Place it back in the oven, this time uncovered, to allow the cheese to melt until it reaches your desired consistency, approximately 5 minutes.

Remove the casserole from the oven and let it rest for 5 to 10 minutes before serving.
