- 2 eggs
- 2 teaspoons chopped fresh chives, divided
- 1/4 teaspoon salt
- freshly ground black pepper to taste
- 1/4 cup shredded Cheddar cheese

Preheat the skillet over medium heat by warming oil, then add diced ham and cook until it reaches a golden brown color and becomes crispy on the outside, stirring constantly to prevent burning. This process should take around 7 minutes.

In a separate bowl, whisk together eggs, 1 teaspoon of chopped chives, salt, and pepper until well combined.

Once the skillet is ready, pour the egg mixture into it and let it cook for 30 seconds. Use a spatula to gently lift the edges of the omelet, allowing any uncooked egg underneath it to come into contact with the hot skillet. Continue stirring and tilting the skillet to ensure even cooking, repeating this process until the egg is almost set.

Sprinkle shredded Cheddar cheese over the top of the omelet, then fold it in half to create a half-moon shape. Flip the omelet over and cook for another 30 seconds to 1 minute, or until it is fully cooked through and the cheese has melted.
