Ingredients
- 1 (16 ounce) package 15-bean soup mix
- 6 cups chicken stock
- 1 ham bone with some meat
- 1 cup chopped onion
- 1 cup chopped carrots
- 1/2 stalk celery, chopped
- 1 tablespoon chopped garlic
- 2 bay leaves
- 2 cups chopped ham
- 2 tablespoons liquid smoke flavoring
- 1 1/2 tablespoons ground mustard powder
- 1 pinch salt and ground black pepper to taste
Instructions
1
Combine bean mix in a large container and submerge it under several inches of water; allow to rest for at least 24 hours. Drain the liquid completely.
2
Heat chicken stock in a large pot that can accommodate both the beans and the ham bone. Bring it to a rolling boil, then add the soaked beans. Gradually reduce the heat and let simmer until the beans become tender, approximately 1 hour.
3
Reintroduce the stock and beans to a boil. Add the ham bone, onion, carrots, celery, garlic, and bay leaves to the pot. Lower the heat to a low setting and let simmer until the vegetables are soft, taking around 1 hour. Introduce chopped ham, liquid smoke, and mustard powder into the soup. Stir well and let the flavors meld together for an additional 30 minutes.
4
Remove the ham bone from the soup. Season with salt and pepper before serving.
