- 1 pound skinless, boneless halibut fillets
- 1 pinch salt and ground black pepper to taste
- 1 cup shredded Italian cheese blend
- 1 egg
- 1/4 cup mayonnaise
- 1/4 cup minced onion
- 2 tablespoons lemon juice
- 2 tablespoons panko bread crumbs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon dry mustard
- 1 teaspoon seafood seasoning (such as Old Bay®)
- 3/4 cup panko bread crumbs

Preheat a large skillet over medium-high heat by warming 2 tablespoons of oil. Place the halibut fillets inside and sprinkle with salt and pepper to taste. Cook for 4 minutes on each side, or until the fish is tender enough to break apart easily with a fork. Remove from heat and let it rest on a plate for 5 minutes, allowing the fish to cool down. Then, break the halibut into small pieces.

In a separate bowl, combine Italian cheese blend, egg, mayonnaise, finely chopped onion, freshly squeezed lemon juice, 2 tablespoons of bread crumbs, Worcestershire sauce, garlic powder, dry mustard, and seafood seasoning. Mix all the ingredients together until they are well combined, adding more mayonnaise if the mixture seems dry.

Prepare a shallow dish by placing 3/4 cup of bread crumbs inside. Shape the halibut mixture into 6 cakes and then dip both sides of each cake in the bread crumbs to coat them evenly.

Heat the remaining 2 tablespoons of oil in the skillet over medium-high heat. Place the halibut cakes inside and cook for 5 minutes on each side, or until they are golden brown.
