Greek Style Gyros
Ingredients
  • 1/4 cup chopped red onion
  • 1 tablespoon minced garlic
  • 1 tablespoon dried marjoram
  • 1 tablespoon ground dried rosemary
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound 93%-lean ground beef
  • 1 pound ground lamb

Preheat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Next, finely chop a red onion using a food processor until it reaches your desired consistency. Transfer the chopped onion to a piece of cheesecloth and gently press out any excess moisture.

Then, return the onion to your food processor. Add a few cloves of garlic and process until they are fully incorporated into the mixture.

Add some dried herbs like marjoram and rosemary, along with salt and pepper, to the onion mixture. Process these ingredients until well combined.

In a separate bowl, mix together ground beef and ground lamb. Gradually add the onion mixture to this bowl, blending in small batches until everything is fully incorporated.

Now, transfer the meat mixture to a 9x5-inch loaf pan. Make sure to pack it in tightly, eliminating any air pockets within the meat.

Finally, place the loaf pan in your preheated oven and bake until it reaches an internal temperature of at least 175 degrees Fahrenheit (80 degrees Celsius). This should take around 1 hour and 15 minutes.

Once cooked, remove the loaf from the oven and let it rest for a few minutes. Slice it thinly and serve.
