- 2 large onions, sliced into rings
- 2 bay leaves
- 3 1/2 cups Irish stout beer (such as GuinnessĀ®)

Preheat the oven to its highest temperature setting, which is 250 degrees Fahrenheit or 120 degrees Celsius.

In a bowl, combine salt, black pepper, paprika, basil, oregano, garlic powder, and onion powder to create a spice blend. Gently rub this mixture all over the brisket, ensuring it's evenly coated.

Place a layer of onion rings at the bottom of a roasting pan, followed by the brisket with its fat side facing upwards. Scatter some bay leaves around the brisket to add extra flavor.

Pour a generous amount of beer over the brisket, making sure it's completely covered.

Cover the roasting pan with a lid that is oven-safe, or use aluminum foil as an alternative.

Place the roasting pan in the preheated oven and cook for 8 hours, or until an instant-read thermometer inserted into the brisket reaches a safe internal temperature of 145 degrees Fahrenheit or 65 degrees Celsius.
