Guava Jelly Roll Cake

  • 1 cup white sugar
  • 1/4 cup water
  • 1 teaspoon freshly grated lime zest
  • 1 teaspoon vanilla extract
  • 1 cup sifted self-rising flour
  • 1/4 cup powdered sugar, or as needed
  • 1 cup guava paste, softened

Preheat your oven to 375 degrees Fahrenheit (the equivalent temperature is 190 degrees Celsius).

Next, take a 15x10x1-inch jelly roll pan and give it a light coating of butter or cooking spray to prevent the cake from sticking, then dust it with flour for extra non-stick properties.

In a small bowl, crack some eggs and whisk them together with an electric mixer until they become thick, creamy, and have a lovely yellow hue. Gradually add sugar to the mixture while continuously mixing until it's well combined.

Add a splash of water, some grated lime zest, and a few drops of vanilla extract to the mixture and blend until everything is smooth and well incorporated.

Gradually add some flour to the mixture, stirring continuously until you have a smooth batter.

Take this batter and pour it into your prepared pan, making sure to spread it evenly.

Be careful when removing the guava paste from the microwave as it can get very hot due to its high sugar content.

Trim any stiff edges off the cake and spread the guava paste over it.
