- 6 plantains, peeled and broken into chunks
- 1 (16 ounce) can refried black beans
- 1 tablespoon white sugar
- 1 teaspoon salt
- 1 quart oil for frying

Fill a large container with water and submerge the plantains, covering them completely. Bring the mixture to a rolling boil, then decrease the heat and let it simmer until the plantains are soft and tender, approximately 15 minutes. Drain the water and mash the plantains.

Heat refried beans in a small saucepan over low heat, stirring occasionally. Add sugar and salt to the mixture, blending well. Remove from the heat source.

Create a small ball with the mashed plantains, flattening it slightly into an oval shape. Place a small amount of bean mixture in the center of the plantain ball, then use your hands to mold the sides of the plantain around the beans, forming a rounded egg shape.

Heat oil in a deep frying device or large skillet to 375 degrees F (190 degrees C), or until a small amount of batter sizzles and browns in the oil.

Fry the rellenitos in hot oil until they turn a golden brown color. Remove them from the oil and place on paper towels to drain excess oil.
