- 2 tablespoons butter, divided
- 1 thinly sliced sweet onion
- 1 1/2 pounds Yukon gold potatoes, peeled and thinly sliced
- 1 cup shredded Gruyere cheese

Combine salt, pepper, and thyme in a bowl to create the seasoning blend.

Melt 1 tablespoon of butter in a 10-inch skillet over medium heat, allowing it to simmer gently. Cook and stir the onions until they become soft and golden brown, taking approximately 8 minutes to achieve this. Transfer the cooked onions to a separate container.

Melt the remaining 1 tablespoon of butter in the skillet, then remove it from the heat source.

Arrange a layer of potato slices, approximately 1/3 of the total amount, in the skillet in an overlapping pattern. Sprinkle a pinch of the seasoning blend over this layer. Top with half of the onions and half of the Gruyere cheese. Repeat this process, finishing with a layer of potatoes and sprinkling the remaining seasoning blend on top.

Cover the skillet and cook over medium-low heat, gradually reducing the heat to low if necessary, until the potatoes are tender and easily pierced with a fork, taking around 30 minutes to accomplish this. Uncover the skillet and continue cooking for an additional 5 minutes, stirring occasionally. Use a spatula to loosen the edges of the potatoes; let them cool for 5 to 10 minutes.
